Oyster Bienville - fresh oysters, topped with a New Orleans traditional Bienville dressing and broiled with fresh shaved parmesean
Oyster Bordelaise - golden fried oyster finished with a garlic, lemon, and butter sauce
Oyster Meuniere - fresh oyster dredged in flour and fried, smothered in a cayenne, brown butter, and lemon meuniere

Waygu (Kobe) skirt steak stuffed with roasted poblano peppers and Cotija cheese rolled and sliced, smothered in a leche and blackberry maceration

Himalayan salt and mixed peppercorn crusted lollipops over charred brussel sprouts and finished with a date and mint gastrique
